Watermelon Salad with Mint and Rum


Serves 6

Lime zest and juice from 2-3 limes 2 Tbsp. light-brown sugar 2 Tbsp. light rum (or more? to taste) Pinch salt 6 lbs. of chilled, seedless watermelon 2 Tbsp. slivered fresh mint leaves

In a large bowl, whisk together the lime juice, rum, sugar and salt. With a melon baller, (or simply cut into bite sized cubes) scoop melon into balls (about 10 loose cups), or cut into bite-sized pieces. Add melon to bowl – sprinkle with lime zest and mint. Serve immediately or cover and chill for up to 2 hrs. and add the liquid dressing immediately before serving.
